A Hungry Nursing Mom’s Quick Fix: Dragon Noodles

This EASY, affordable and healthy recipe for dragon noodles will quickly become your go to hungry-breastfeeding-exhausted-mom meal!

When I began breastfeeding, the thing that shocked me the most was how HUNGRY I was.

All. The. Time. 

Pregnancy didn’t have anything on that breastfeeding calorie burn.

Nursing Mom's Easy Dragon Noodle Recipe

I tossed toasted Peanuts, a tablespoon of peanut butter, and garden zucchini in this dish.

Unfortunately, the hunger pangs most likely hit me out of nowhere.

SO even though I did a LOT of babywearing, being a tired, breastfeeding mom, I grabbed whatever crappy pantry food I could find, instead of fixing a real meal. I wish I had this recipe then, because it is SO delicious, semi healthy, and easy to whip up! Hangry Breastfeeding mamas, I give you… Dragon Noodles.

The thing I love most about this recipe is how versatile it is! The base of this Asian-style dish contain 5 simple ingredients- ones you most likely have lying around your kitchen. But the best part is, you can throw just about anything into it to add a little somethin’ somethin’ to it.

Today I added peas, peanut butter, and some of Aldi sweet and sour sauce.

I also call my dragon noodles “leftover pasta” because I tend to throw any random leftovers from my fridge into the skillet. Pork roast? Chicken breast? Ground turkey? Corn? Zucchini? Carrots? Peas?  I also love to add peanut butter, peanuts, or ginger to mine.

So really, the possibilities are endless, and it takes no fancy ingredients.

5 Ingredient Dragon Noodles

Eggs pasta and the sauce! Easy peasy lemon squeezy

All you need are 5 simple ingredients for your hangry fix.

  • whole wheat spaghetti noodles
  • 3 tbsp. soy sauce
  • 3 tbsp. brown sugar
  • 1 tbsp. sriracha
  • 1 egg

How to

So first, boil your pasta. Then mix together wet ingredients. While you’re doing that, scramble and fry an egg in a skillet. Finally, Add all of your ingredients to said skillet.

Stir. Eat. Enjoy.

 

A Breastfeeding Mother's Hungry Quick Fix: Dragon Noodles

For this version of dragon noodles, I added a pound of fried (and rinsed) hamburger meat, carrots, and spinach. This also fed every one of my daycare littles, with leftovers. (They had no idea there was spinach in it!)

Now, the most difficult part is to not spill any on your baby as you attempt to eat and gobble it up. (It’s ok, we all do it!)
